摘要 对醇洗法制备花生浓缩蛋白时,乙醇浓度与产品溶解性的关系进行了研究。采用混合溶剂制备花生浓缩蛋白,可获得蛋白质变性程度低、溶解性好的产品。 The relation of Concentration of alcohol with Solubility of prodrct was Studied,in preparation of peanut protein concentrate by alcohol washing.In preparation of peanut protein Concentrate with mixed Solvent,a lower-denaturation of protein and higher-Solubility product can be obtained.Its cause was explored on theory.
