近年来对啤酒风味老化的研究进展迅速。但是,到目前为止还没有公认可行的啤酒风味老化的评价方法。本文总结了各种国内外关于啤酒风味老化的评价指标及方法。
There was great improvement about the research of beer staling flavor in recent years. But the evaluation method of beer staling flavor was not recognized by now. It was summarized all kinds of evaluation index and its method of the beer staling flavor of the world in this article.
