麦麸体外结肠微生物酵解微粒的研究

In vitro study on wheat bran particles after fermented by faecal flora

摘要 体外模拟人体结肠的pH和微生物环境,研究麦麸经过结肠后微粒的大小和电荷密度以及形状。以麦麸为唯一碳源,接种结肠微生物混合液厌氧培养24h。采用Zeta电位仪和原子力显微镜分别对发酵上清液中的颗粒进行研究。结果表明,酵解后发酵上清液中微粒呈球形,平均粒径为570.2nm,微粒主要集中在3个范围:63.35~119.22、262.79~494.57nm以及1276.86~2814.55nm,ζ(zeta)电位为(-10.72±2.94)mV。 The characteristics of particles released from dietary fiber of wheat bran after incubated with human faecal flora in vitro were studied. A zeta potential analyzer was used to determine the particle size distnbution and ζ (Zeta) potential in the filtrate of the culture broth. A AFM was used to study the shape of articles. Results showed that average diameter of fermented wheat bran particles was 570.2 nm, and mainly distributed in three ranges, 63.35-119.22, 262.79-494.57 nm and 1276.86-2814.55 nm respectively, ζ(zeta) potential of the particles was (-10.72±2.94) mv. The particles were found mainly in the shape of sphericity.
