摘要
采用流动注射化学发光新体系,以抗坏血酸为对照,对草莓红色素和草莓红色素与Vc(1∶1)混合液进行体外抗氧化活性研究。实验结果表明,草莓红色素对O2-·、·OH和H2O2均有良好的清除效果,并呈量效关系,且草莓红色素与Vc混合液具有协同抗氧化作用。与其他的抗氧化测定方法相比较,所用试剂廉价、简单、快速灵敏。回收率为97%~105%,相对标准偏差为2.3%。
The antioxidant activity of strawberry red pigment was evaluated in this paper. The scavenging ability on hydroxyl radical, superoxide anion radical and hydrogen peroxide were studied by flow-injection chemiluminescent new methods. The tested results in vitro showed that strawberry red pigment had strong scavenging activity to ROS on the basis of scavenging rate was liner with its concentration to a certain vitamin C, The recoven is 97%-105% and the coefficient of variation is 2,3%,
