摘要 目的调查大型超市中熟肉制品的卫生状况,为卫生行政部门提供相关依据。方法对北京市大型超市中的熟肉制品进行随机采样,对所采样品进行微生物学检测,并分析记录资料。结果超市中的熟肉制品卫生状况存在安全隐患,熟肉制品的合格率为88.3%。结论卫生行政部门应加强对超市中熟肉制品的卫生监督管理,完善卫生设施,提高从业人员的卫生素质,减少由此可能引发的食源性疾病的暴发,保证人民群众的身体健康。 [ Objective] To investigate the sanitary situation of cooked meat produce in supermarket, provide evidences to health administration. [ Methods] The specimens which sampled randomly among cooked meat produce of Beijing supermarket were detected by microbiology, and the data were analyzed. [ Results] The potential danger of food safety was found in cooked meat produce of supermarket. The qualified rate of cooked meat produce was 88.3% : [ Conclusion] Health administration should strengthen surveillance and management of supermarket cooked meat produce, improve sanitary measm'e and enhance health capacity of workers, reduce outbreak of foodborne disease which caused by cooked meat produce possibility, ensure people's health.
