摘要
以小麦A淀粉为材料,采用乙醇-碱处理法制备颗粒状冷水可溶淀粉,在系统分析乙醇体积分数、碱浓度、反应温度、反应时间等因素对颗粒状冷水可溶淀粉溶解度影响的基础上,对其制备工艺条件进行了优化。结果表明:采用乙醇-碱法制备小麦颗粒状冷水可溶淀粉,乙醇体积分数和反应时间对产物溶解度的影响显著;小麦颗粒状冷水可溶淀粉的适宜制备条件为反应温度65℃,乙醇体积分数80%,反应时间为80min,碱浓度10g/100ml,其溶解度可达81.44%。
The effects of ethanol concentration, alkaline concentration, reaction temperature, reaction time, and other factors to the solubility of granular cold-water-soluble starch were analyzed, and the preparation technology conditions were also optimized. The results showed that by using ethanol-alkali method to prepare cold-water-soluble starch, the impact of ethanol concentration and reaction time on the solubility of wheat granular cold-water-soluble starch was significant; the appropriate preparation conditions for wheat coldwater-soluble starch was on the reaction temperature of 65℃, ethanol concentration of 80 ml/100 ml, reaction time of 80 min, alkali concentration of 10 g/100 ml, under this condition the solubility of the product was up to 81.44%.
