营养基因组学及其对食品产业的影响

摘要 生命科学已进入后基因组时代,营养科学也试图从分子学的角度找出食物中的某些化学物质怎样通过改变基因表达和个体的基因组结构而对人类的健康产生影响,因此营养基因组学的发展将对食品开发产生巨大影响。
