大豆是唯一"完全蛋白质"的植物来源,其9种必需氨基酸的含量均能满足人体的需要。近几年,随着加工工艺的改进,添加大豆蛋白的营养食品开始在世界范围内受到消费者的青睐。简要介绍了大豆蛋白的应用现状、特点及在食品中的应用。
Soybean is the only plant source of "complete protein", and its contents of 9 kinds of amino acid can meet the demand of human body. Soybean protein content is high, and its necessary amino acid balance is nice, which is close to the amino acid make up that human body needs. And among them, lysine content is high, which remedies the defect of grain food. In recent years, with the improvements of processing technology, food with soybean protein more popularity around the world. People come to realize that developing and utilizing soybean protein is an effective way to increase the protein content in diet. Researchers performed a series further study on soybean protein and its products, and obtained the remarkable achievements. The features of soybean protein and its applications in staple food, meat products, drink and textile products were introduced in the paper.
