以金华火腿加工为主的食品企业为实施对象,对其金华火腿加工过程实施ISO22000食品安全管理体系管理,运用HACCP理论与方法对其生产中危害因素进行详细分析,确定关键控制点,建立纠偏措施程序和监控程序,并建立较为完善的ISO22000管理方案,在整个金华火腿加工生产、储运过程中予以实施,使食品的危险性减少到最低。
Taking a food - enterprise Jinhua ham as a target of implementation, ISO22000 ( The requirement of food safety management system) management system was implemented during Jinhua ham processing. By detailed analysis of risk factors with the theory and methods of HACCP system, critical control points were identified, and correctives procedures and monitoring procedures were established. The better management program of ISO2200 was implemented throughout the process of Jin - hua ham production, storage and transport to reduce the risk of food to the minimum.
