摘要 黄曲霉毒素是生长在食物及饲料中的黄曲霉和寄生曲霉代谢的一组化学结构类似的产物,是一组具有致癌、致畸、致突变性的毒性极强的化合物,其毒性随种类或结构的不同而存在着较大的差异。黄曲霉毒素B1被公认为是目前致癌力最强的天然物质,并且分布很广,对世界范围内的绝大多数食品原料和制成品均有不同程度的危害。综合了国内外文献,介绍了食品中黄曲霉毒素B1的检测方法,为进一步加强食品中黄曲霉毒素B1的控制提供参考。 Aflatoxins (AFT) are very harmful pollutants generally existing in peanntn, corns, farm products and so on, and they can lead serious food safety and harmed human health. So it is important to look for a accurate, fast and simple methed to detect the AFT. Many methods for the determination of aflatoxins have been developed in recent thirty years. The limits for aflatoxins have been set down for foods and farm products in different countries successively. The methods and application of TCL, HPLC, immunoassay and new detecting methods were discussed in this paper, and the prospect of detecting methods of AVFB1 was explained for the future, which can provide the references to the researchers who are engaged in the determination of aflatoxins.
