摘要
玉米蛋白粉是湿式法玉米淀粉加工的副产物,可应用于各个领域。综述了玉米蛋白粉的组成、营养价值及其成分特点。利用玉米蛋白粉,可开发出玉米醇溶蛋白、玉米黄色素、谷氨酸、天然蛋白水解肽、可降解材料、膨化食品等深加工产品,具有成本低、无毒副作用的特点,提高了玉米蛋白粉的附加值,具有广阔的市场前景。
Corn gluten meal (CGM) is the byproducts, of the corn starch produced by wetting processing, and it can be used in many fields. This paper summarized composition, nutrition and the composition characteristics of CGM. The characters provide us ways to develop zein, maize yellow pigment, glutamate acid, natural proteolysis pepides, degradable material and the puffed food, can he produce all of which were made by the corn gluten meal. It can decrease the processing cost without any negative effect on the environment, increase the added valued of the CGM, and it is vast market prospect.
