摘要
冰温技术是农产品贮藏、保鲜技术上的一次革命。冰温技术开创以来,已经被应用于农产品的保鲜与流通中,并且取得了较好的效果,但是冰温技术的推广还有赖于对冰温保藏的深入研究。介绍了冰温技术的特点及其在食品保鲜中的具体应用,展望了冰温技术的发展方向。
Ice-temperature preservation technology is a revolution in farm products storage and preservation. The technology has been widely applying in agricultural products storage and circulation, and has been ohtaining a favorable effect. Charac-teristics of the technology and it application in food storage were introduced in this paper, and prospects for developing direction of the technology were given.
