酱油渣中黄酮及纤维素提取工艺的研究 被引量:7

摘要 研究了酱油渣中黄酮及纤维素的提取工艺,并对其他有效成分的含量进行了检测,为进一步开发利用酱油渣资源提供基础数据。通过正交实验分别确定黄酮、可溶性纤维素、不溶性纤维素提取的最佳工艺条件。采用国标法测定酱油渣中粗蛋白、油脂和灰分的含量,利用原子吸收光谱仪测定其中铁、钙、铜、锌等微量元素的含量。经过实验证明,酱油渣含有丰富的有效成分,对于酱油渣的资源化研究具有重要的意义。 Studied on extraction technology of flavonoids and cellulose from soy sauce residue. The contents of other effective components was also determined. It can provided basic informations for developing soy sauce residue resources further. The optimum conditions for extracting flavonoids, SDF and IDF were determined through orthogonal test. The contents of crude Pro- tein, oil and ash was measured with national standard method. The content of iron, calcium, copper, zinc and other trace elements were determinated by atomic absorption spectrophotometer. Experiments showed that soy sauce residue contained rich effective components. It had important significance to research on soy sauce residue resource.
