摘要
用液相色谱技术对大米麦芽糖化液和大米饮料中的糖类组分进行了测定。结果表明,大米糖化液和大米饮料中均含有葡萄糖、麦芽糖与麦芽三糖,且两种饮料中的3种糖类的比例类似。大米饮料中的3种糖含量较低,并添加了蔗糖作为甜味添加剂。实验表明,使用麦芽作为糖化剂生产大米饮料是可行的。
The carbohydrates in saccharificated liquid respectively were measured by the technology of HPLC. The measure-ment results indicated that the both of them contain glucose, maltose and malt trisaccharide to produce rice beverage is possible. Besides, sucrose is found in the rice beverage in the saccharificated liquid.
