It takes a pivotal position that Chinese traditional fermented food in the food industry. The high-tech applications and industrialization level in the traditional fermented food industry is the true level response of a national science and technology. This paper elaborated on Chinese traditional fermented food situation and the development of the existing problems, and the principles and applications with the high-tech transformation.
