摘要 系统综述了天然多肽抗菌活性物质Nisin的结构、性质、抗菌机制、作用方式,及其作为抗菌剂在食品中以及食品抗菌保鲜包装中的应用。 This review covers the molecular structure, secretion mechanism, property, antimicrobial mechanisms and mode involved of Nisin, the antiseptic application while keeping fresh food and antimicrobial packaging.
