摘要
综述了国内保健挂面的发展现状,举例说明了营养物质添加量设计的实验方案,对保健挂面生产过程中存在的问题进行分析,以及解决营养成分流失的各种营养强化新技术新方法,并对保健挂面在今后的发展作出了展望。
This article introduced the development status of nutritional and dried noodles in China, and introduced the experimental plan of nutritions'dosage, besides, it also analysed the problems in the technics of manufacturing the nutritional and dried noodles, also several new technologies and new methods for holding the nutri- tions, then made an expectation on the development of nutritional and dried noodles in the future.
