摘要
目的了解中西部农村中小学校食堂卫生现况,为今后制定农村学校食堂硬件设施与卫生管理规范提供依据。方法应用自行设计的调查表,对分层抽样的中西部地区的61所农村中小学校食堂进行现场调查。结果80.4%的学校实行食品卫生校长负责制,90.2%的学校持有有效卫生许可证;45.9%的学校食堂内外环境不整洁,52.5%的学校无有效"三防"设施;41.0%的学校没有做到生食、半成品及熟食分开存放。不同类别学校食堂基础设施与食品卫生情况差异均无统计学意义(P值均>0.05)。结论中西部农村学校食堂卫生状况普遍较差,存在食品卫生安全隐患,应该引起重视。
Objective To know the hygienic situation of rural school cafe,terias in middle and western regions of China, and to provide evidence for making related regulations or criteria. Methods By stratified sampling method, 61 rural schools were investigated with self-designed questionnaire. Results About 80.4% of the investigated schools, in which the principals took main responsibility of cafeteria regarding to hygiene and health issue; 90,2% of the investigated schools held the hygiene licences; 45.9% schools had unclean surroundings, and 52.5% lacked required sanitary equipment; 41.0% mixed uncooked foods, semi-manufactured foods and cooked foods together. There were no significant differences of required sanitary equipments and food hygiene among primary schools, middle schools and high schools ( P 〉 0.05 ). Conclusion The hygienic and sanitary situation of the rural schools cafeterias in western and middle regions of China is not satisfied,more attentiou should be paid to this issue.
