摘要
介绍了碱溶酸沉法生产大豆分离蛋白生产工艺,简述了工艺操作要点,对生产过程中的主要影响因素进行了分析讨论。生产实践表明,碱溶酸沉法工艺简单,生产的产品蛋白含量高,氮溶解指数高,蛋白质量好。
The production technology of soybean protein isolate by alkali extraction and acid precipitation was introduced, the main influence factors and key operation points were also described. The production practice showed that the production technology was simple, the product has the advantages of high protein content, high NSI and better quality.
