摘要 采用索氏提取法提取了来自不同产地的鹰嘴豆中的油,经甲酯化处理利用GC-MS法对其脂肪酸组成及含量进行了分析测定。结果表明,从鹰嘴豆油中鉴定出5种脂肪酸,分别是棕榈酸、亚油酸、(Z)-十八碳烯酸、(E)-十八碳烯酸、8,11-十八碳二烯酸,来自不同产地的鹰嘴豆油中不饱和脂肪酸含量均达到80%以上。由此可知,鹰嘴豆具有很高的营养价值和开发前景。 the chickpea from different areas were extracted with Soxhlet extraction to obtain oils. The chickpea oil was esterified by sulfuric acid -methanol and analyzed by gas chromatography- mass spectrometry( GC - MS). The result showed that five fatty acids were detected, namely palmitic acid, linoleic acid, oleic acid, elaidic acid and 8,11 - octadecadienoic acid. The content of unsaturated fatty acids in the oils of chickpea from different areas were all more than 80%. The chickpea has an high value and well development prospect.
