摘要
定量风险评估是对某种危害造成的风险的性质和严重程度的技术评估。将这门新学科应用于食源性致病菌的研究,有利于推动风险管理与风险交流。介绍了沙门菌属、弧菌属、单核细胞增生性李斯特菌、大肠埃希菌O157∶H7、弯曲菌属、腊样芽孢杆菌和阪崎肠杆菌等几种重要食源性致病菌定量风险评估的应用实例。
Quantitative risk assessment could be the technical assessment of the nature and severity of a risk caused by a hazard. The application of quantitative risk assessment to the study of food-borne pathogens would be beneficial to the risk administration and communication. In the application of quantitative risk assessment for several important food-borne pathogens, included Salmonella spp, Vibrio spp, Listeria monocytogenes, Escherichia coli O157 : H7, Campylobacter spp, Bacillus cereus and Enterobacter sakazakii were introduced.
