摘要
目的了解美国食品防护计划及其与危害分析及关键控制点(HACCP)的关系。方法对美国食品防护计划建立与实施的背景、食品防护计划涉及的内容、食品防护计划的建立和实施的步骤、食品防护计划与HACCP的关系进行了研究。结果食品防护计划控制蓄意污染,能够把产品受到蓄意污染或破坏的危险降到最小化,HACCP计划控制偶然污染。结论食品防护计划有助于企业为员工创造安全的工作环境,为顾客提供有质量保证的产品,保障企业的盈利。
