摘要
研究了用高效液相色谱法测定辣椒中的辣椒素。色谱柱为Hypersil ODS柱(4.0mm×250mm,5μm)UV检测器波长为280nm。流动相为V(CH3OH)∶V(H2O)=75∶25,流速1.2mL/min。结果表明:线性回归方程是y=1042106.11x+2.7929717相关系数为R=0.99999样品的精密度RSD=2.6%,平均回收率为97.39%,并对12个辣椒品种中的辣椒素进行测定,辣椒素含量最高的是野山椒-1,最低的是樱桃椒。
The determination of capsicin in pepper was studied by means of high performance liquid chromatography (HALP). The HPLC system consisted of Hypersil ODS (4.0 mm×250 mm, 5 μm) and UV detector set at 280 nm. The mobile phase was V(CH3OH) : V(H2O)= 75 : 25 with a flow rate of 1.2 mL/min. The results showed that the linear equation was y=1042106.11x +2.79 and correlation coefficient was 0. 99999. The average recovery was 97.39%. Capsicin in 12 different varieties of capsicum were determined, the one that contains maximum capsicin is wild pepper-1, minimum one is cherry pepper.
