摘要
提出了实用的冻结食品全比热和导热系数的计算式,并介绍了在食品冷冻热负荷计算和冷冻过程计算机模拟中的应用。
The calculation methods of complete specific heat and thermal conductivity of freezing food are put forward in this paper. And their applications in calculating the heating load of food being freezed and in computer simulation of freezing process are also discussed. The results show that they have the spreading value.
