果醋生产已有悠久的历史。现代研究表明,果醋抗氧化作用对于预防和治疗高血脂和心血管疾病具有重要的意义。文中对果醋果醋中多酚类化合物的性质、多酚类化合物的抗氧化作用机理、抗氧化能力的评价以及果醋抗氧化作用研究进展作了详细论述。
The fruit vinegar production has a long history. The modem research indicats that the antioxidation of fruit vinegar has significant application in prevention and treatment of high blood fats and cardiovascular disease. In this article, the properties and antioxidation mechanism of polyphenol in fruit vinegar were discussed, as well as the evaluation of antioxidation activity and the research progress in antioxidation of fruit vinegar.
