摘要 对HPLC法、分光光度法和荧光光度法测定啤酒中草酸含量的实验条件进行了比较和优化,实验结果表明,HPLC法和分光光度法的实验重复性较好,回收率较高,检测范围较宽,能较好地满足实际检测的需要,但HPLC法对实验设备的要求较高,而分光光度法不适合于要求较高的场合。荧光光度法由于检测限较低,非常适合于低草酸含量啤酒(如加钙啤酒)的测定。 Three methods of determining oxalic acid in beer including HPLC, spectrophotometry and fluorophotometry were compared and optimized in this paper. The results showed that the methods of spectrophotometry and HPLC have better repeatability, higher recovery rate and wider detectability range, which could meet the demand of practical determination. However, the cost of HPLC was relative high and the spectrophotometry could not obtain higher sensitivity. Due to its low limit of detection, fluorophotometry method was suitable for detecting low content of oxalic acid.
