摘要
通过建立数学模型,测定广式腊肠中亚硝酸盐含量的不确定度,根据不确定度的原理进行了分析研究。影响腊肠中亚硝酸盐不确定度的因素主要有亚硝酸盐标准溶液和标准曲线引入的不确定度,其中体积引入的不确定度为最主要的因素,并得出了广式腊肠中亚硝酸盐测定的扩展不确定度为(5.84±0.08)mg/kg。
According to theory of uncertainty, the uncertainty in determining nitrite in Guangdong style sausages was investigated through establishing mathematical models in this paper. The results showed that the factors which influenced the uncertainty were the standard solution of nitrite and its standard curve, in which the uncentainty caused by volume was main factor. In addition, it was found that the expanded uncertainty in determination of nitrite in Guangdong sausage was 5.84 ±0.08 mg/kg.
