摘要
将纤维素酶应用于苜蓿叶蛋白的提取,研究酶解反应时间,反应温度,底物浓度和加酶量4因素不同水平对苜蓿叶蛋白提取率的影响,并对提取工艺进行优化,试验表明对提取率影响顺序为:反应温度>反应时间>加酶量>底物浓度,最佳工艺为,加酶量10 U·g-1,底物浓度1∶6,40℃反应1 h。
In this research fibrin enzyme was used to separate alfalfa leaf protein. The effects of reaction time,temperature content chroma and the quantity of enzyme in different levels on the extraction ratio of alfalfa leaf protein was also analysised. The results showed that the influencing sequence were as follows: reaction temperature〉 time〉enzyme's quantity〉content chroma.The optimum parameters were enzyme's quantity 10u·g^-1,chroma content 1:6, reaction time 1 h under 40℃.
