顶空进样气质联用法分析公山羊气味的挥发性成分

摘要 以西北农林科技大学萨能羊原种场的西农萨能种公羊为试验材料,利用Therm o Finnigan TR AC E D SQ气相色谱-质谱联用仪,Finnigan H S 2000顶空进样器,D B-5M S(30 m×0.25 m m×0.25μm)色谱柱,采用静态顶空方法对公山羊气味中的挥发性成分进行测定。结果共鉴定出16种挥发性物质,占总挥发性物质的93.55%,包括酮类5种、酯类3种、烷烃类3种、苯类3种、醛类2种,含量分别为4.16%、1.16%、85.82%、0.97%、1.44%。在发现的所有气味成分中,主要为C 6及部分低碳数的醛、酮和酯(包括饱和及不饱和化合物)等化合物,这些物质成分可能是低碳链脂肪酸合成的前体或代谢产物。
