摘要
利用原子力显微镜对白酒陈酿过程进行了研究,对白酒自然陈酿老熟及微观形态颗粒的积聚机理和积聚模型进行了初步探讨。以期能够建立原酒、调味酒的微观形态图谱,将白酒微观图谱作为白酒质量标准的一个指标进行规定,为提高企业的标准化水平和产品质量提供理论参考。
The aging process of Chinese liquor was studied by use of atomic force microscope. The natural aging of liquor and the gathering mechanism and gathering model of liquor microcosmic granules were investigated in order to establish microcosmic confornation diagram for base liquor and blending liquor. Then such diagram could be used as one standard index for liquor quality evaluation and it could provide theoretical reference for improving enterprise' standardized level and product quality.
