保加利亚乳杆菌胞外多糖合成及生物学特性研究

Study on Exo-polysaccharides Synthesis by Lactobacillus bulgaricus and Their Biological Characteristics

摘要 影响保加利亚乳杆菌胞外多糖合成的因素较多,选取培养温度、pH、接种量及碳源作为影响的主要因素进行探讨,当乳杆菌的培养温度为40℃、pH值为6、接种量为2%、添加葡萄糖作为碳源时,能够得到得率较高的胞外多糖。该胞外多糖具有一定的生物学功能,灌胃小鼠胞外多糖能使小鼠具有较强活动耐力且耐缺氧,同时胞外多糖可以促进嗜酸乳杆菌的生长。 Main factors affecting exo-polysaccharides (EPS) synthesis by Lactobacillus bulgaricus, such as culture temperature, pH, inoculation amount and carbon sources, were discussed. Higher yield of EPS can be achieved under the conditions of culture temperature 40℃, pH 6, inoculation amount 2% and glucose used as carbon source. The EPS has some biological functions, can endow mice with strong stamina and resistance to anoxia by gavage, and also can promote growth of Lactobacillus acidophilus.
