摘要 本文介绍了微生物源低聚果糖合成酶的国内外研究和开发现状。根据国内外文献综述了微生物源低聚果糖合成酶的种类、理化性质、产酶条件、发酵方式及低聚果糖合成酶的分子生物学方面的研究进展。 In this article, the varieties, characters, production conditions, fermentation modes and some study advances in molecular biology about synthase of fructooligosaccharides from microoganism were summarized.
