摘要
目的:探讨和建立菌落数检测结果的不确定度评定方法。方法:依据《JJF1059-1999测量不确定度评定与表示》和《GB/T4789.2-2003食品卫生微生物学检验菌落总数测定》,参照国际通行的菌落数检测结果的不确定度评定方法。结果:建立了简便易行的食品的菌落数检测结果的不确定度评定方法。结论:影响菌落数检测结果不确定度的因素很多,但平板上菌落数的不确定度、稀释倍数的不确定度和加样体积的不确定度是在评定菌落数检测结果的不确定度时必须计算的三个不确定度分量。
Objective: To set up a feasible method for uncertainty evaluation for colony forming units(CFU) of foods.Methods:Refering to some published methods and basing on JJF1059-1999 Evaluation and Expression of Uncertainty in Measurement and GB/T4789.2-2003 Microbiological Examination of Food Hygiene-Detection of Aerobic Bacterial Count.A example for the evaluation was given.Results:A feasible method for uncertainty evaluation for CFU of foods was established.Conclusion:Uncertainty from CFU appearing on testing agar plates,from dilusion factor and from testing volumes of food samples must be considerated into the evaluation if other factors resulting in the uncertainty are omitted for simplifying the evaluation.
