衢州市2007年熟肉制品微生物学检验监测分析 被引量:6

摘要 目的:了解我市市售熟肉制品卫生状况。方法:以普通消费者身份购买市场和宾馆的熟肉制品进行微生物指标监测检验,项目包括菌落总数、大肠菌群及致病菌(沙门菌、志贺菌、金黄色葡萄球菌和副溶血性弧菌)。并与卫生监督所采集的同类监督检验样品的检验结果进行比较。结果:监测检验样品合格率为13.33%,监督检验样品合格率为37.04%,总体合格率为28.57%,同时,检出8株金黄色葡萄球菌和1株副溶血性弧菌。结论:我市市场上销售的熟肉制品卫生状况不容乐观,高档酒店宾馆的食品卫生与个体摊点食品卫生不相上下。 Objective: To investigate the status of cooked meat product in Quzhou city market.Methods:Purchases cooked meat product in the market and the guesthouse by the ordinary consumer status,monitoring and verifying the project with biological target,which including the aerobic bacterial count,coliform bacteria and the pathogenic bacteria(Salmonella,Shigella,S.aureus,V.parahaemolyticus).Compare the results with the congeneric supervisory sample's result which are gathered in the sanitary supervision.Results:The qualified rate of monitoring sample is 13.33%,the qualified rate of supervisory sample is 37.04%,the overall qualified rate is 28.57%,simultaneously,pick out 8 S.aureus and 1 V.parahaemolyticus.Conclusion:The status of cooked meat product,which selled in the city market,is unoptimistic.the food sanitation in upscale guesthouse's and the food sanitation in individual vending point is equally matched.
