摘要
[目的]探求间接、准确测定马铃薯含糖量的方法、途径和路线,以最大限度的利用马铃薯资源。[方法]采用3条途径、2种水解处理方法测定马铃薯样品中的含糖量,分析比较马铃薯渣酸水解、马铃薯淀粉酸水解、马铃薯淀粉酶解、煮熟的马铃薯酶解和马铃薯直接酸水解5组方案所测定的含糖量,确定最佳测定方案。[结果]经途径Ⅰ测得的含糖量最高,远高于途径Ⅱ和途径Ⅲ的测定值,其中以马铃薯淀粉经酸水解路线测定含糖量最高,达89.70%;最佳处理方案为马铃薯渣和马铃薯淀粉分别经酸水解后,采用DNS试剂法测定含糖量。[结论]通过对马铃薯含糖量的测定,确定途径Ⅰ为最佳方案,此方案具有相当可观的工农业利用价值。
[Objective] The indirect and accurate determination method of the sugar content in potato,the study aimed to obtain a maximum utilization of potato resources.[Method] Three kinds of different ways and two methods,including potato residue acid hydrolysis,potato starch acid hydrolysis,potato starch enzymatic hydrolysis,cooked potatoes enzymatic hydrolysis and Potato direct acid hydrolysis were used for confirming the best scheme.[Result] It was measued thatⅠway got the highest sugar content and much higher than theⅡand Ⅲ way; sugar content reached as high as 89.70% by the method of potato starch acid bydrolysis;the treatment of combination of potato residue acid hydrolysis and potato starch acid hydrolysis by using DNS method was the best scheme.[Conclusion] The way I was the best scheme,and it had great utility value to industry and agriculture.
