摘要
[目的]为向日葵芽菜工业化生产提供理论依据。[方法]分析不同处理对向日葵芽菜萌发的影响,同时测定浓度1.0%NaCl溶液浸种培养的芽菜中氨基酸和蛋白质含量的变化。[结果]研究结果表明:紫外线照射抑制种子萌发,而超声波处理、NaCl和KNO3溶液浸种都不同程度地促进种子萌发,其中以浓度1.0%NaCl溶液浸种效果最明显;浓度1.0%NaCl溶液处理的种子中的氨基酸和蛋白质含量均高于同期对照。[结论]向日葵芽菜在浓度1.0%NaCl处理下氨基酸和蛋白质动态变化的机制还有待于进一步研究。
[Objective] The research aimed to provide references for the industrial production of Helianthus sprouts.[Method] Effects of different treatments on Helianthus sprouts seed germination was analyzed.The treatment of 1.0% NaCl solution on the germination of Helianthus sprouts seed was determined.[Result] The results showed that the UV irradiation treatment could restrain the germination of Helianthus sprouts.Ultrasonic treatment, NaCl solution and KNO3 solution accelerated the germination of Helianthus sprouts, and 1.0% NaCl solution had obviously accelerating effect.Amino acids and protein contents were higher than the CK group under treatment of 1.0% NaCl solution.[Conclusion] The dynamic changes mechanism of amino acids and protein of Helianthus sprouts under treatment of 1.0% NaCl solution needed further study.
