黑玉米花色苷抗氧化能力的研究 被引量:10

摘要 从还原能力、抗脂质过氧化和对自由基清除能力等方面对黑玉米花色苷的抗氧化能力进行了试验研究和评价。结果表明:黑玉米花色苷具有一定的还原能力,对脂质过氧化、DPPH(1,1-二苯基-2-苦肼基)自由基和超氧阴离子自由基均具有较强的抑制和清除作用。在试验浓度范围内,其对应的最大抑制率和清除率分别为52.05%、95.61%和77.45%。黑玉米花色苷作为具有抗氧化功能的天然色素,其应用前景广阔。 In this paper, the antioxidant activities of black corn pigment were studied and evaluated by determining the reducing capacity, antioxidant activity on lipid-peroxidation, free radical -scavenging activity on DPPH and superoxide anion. The results showed that they had stronger reducing capacity, antioxidant activity on lipid-peroxidation, and scavenging effects on DPPH radical and superoxide anion. In the range of test concentration, the maximum scavenging or inhibition rate to linoleic acid auto-oxidation, DPPH radical and super oxide anion was 52.05%, 95.61% and 77.45% respectively, and broad application prospects. the results suggested that black corn pigment has antioxidant activities .
