摘要
对怀山药道地产区的铁棍山药及其零余子中淀粉、脂肪、氨基酸和灰分等营养成分进行分析比较。结果表明,铁棍山药中淀粉和灰分含量高于零余子,而零余子中脂肪、总氨基酸以及必需氨基酸的含量高于山药。山药零余子营养成分丰富,值得进一步研究和开发。
The components of starch, fat, amino acid and ash were determined to analyzed nutrient components of iron stick yam and bubil. The result showed that the amount of starch and ash in iron stick yam were significant higher than in bubil. However, the amino acid and fat of bubil were much higher quantity than iron stick yam. The evaluation of bubil was nutritional, and was deserved for the further study.
