摘要
γ-氨基丁酸(GABA)在动植物体内广泛存在,是中枢神经系统内重要的抑制性神经递质。本文对植物中GABA的分布、代谢、生理功能及桑叶中的GABA研究进展作一归纳与论述,以供读者更方便对GABA的了解,为研究和开发富含GABA的食品和饮料提供帮助。
GABA is distributed widely in animals and plants as an important inhibitory neurotransmitter in central nervous system. The distribution, metabolism and physiological function of GABA and GABA in mulberry leaf were summarized and discussed respectively in this review for conveniently knowing GABA. it is expected to offer better theory to the research and development of foods and beverages which were rich in GABA.
