摘要
针对目前水油一体或高低温油油炸设备,采用低速燃烧器加热所存在的缺点,尝试将高速燃烧器应用于浸管加热装置。利用数值模拟与试验测试相结合的方法,分析高速燃烧器用于浸管式加热装置的传热性能,给出反映不同烟气温度和速度时、浸管内对流换热与辐射换热在总换热中所占份额的曲线。研究结果表明:用高速燃烧器代替传统的低速燃烧器,不仅可提高设备的热效率,而且还可减少浸管管材的消耗,提高设备的有效工作容积,减少油槽的容油量,同时可使加热管温度分布更为均匀,有利于改善油炸食品的质量。
Based on the shortcomings of current water-oil or oil-fried cryo- genic equipment, using the low-speed burner, a new idea was supposed, in which the high-speed burner was introduced in submerged tube device . Both methods of numerical simulation and experimental testing the perfonnance of heat transfer from high-speed burner to submerged tube were attempted. Some curves reflecting the heat convection and radiation in the proportion of the total heat transfer in submerged tube burner with different smoking temperature and speed were given . The results showed that after low-speed burner replaced by high-speed burner not only the heat flux would be raised but the consumption of pipe would be reduced. The effective volume of equipment would be increased and the capacity of fuel tanks would be reduced. At the same time the temperature distribution was more uniform so the quality of fried food would be improved.
