摘要 维生素（vitamin）是维持人体生命活动必需的一类有机物质，也是保持人体健康的重要活性物质。它在体内的含量很少，但在人体生长、代谢及发育过程中却发挥着重要作用。许多维生素是辅基或辅酶的组成部分，直接关系到新陈代谢。通常可分为脂溶性和水溶性两大类，其中脂溶性维生素包括维生素A、D、E、K，大部分由胆盐帮助吸收，循淋巴系统到体内各器官；
