摘要
对大米过敏原进行了简介,阐述了超高压消除大米过敏原的机理,最后论述了超高压消除大米过敏原的影响因素和处理条件。
This paper gives a brief account on the rice allergens, then mechanism of high pressure technology to eliminate rice allergens are expatiated, finally, the influence factors and treat conditions of eliminating rice aller- gens are dissertated.
