摘要
建立了HPLC法测定麦汁和啤酒的异α-酸,在25分钟内同时分离检测3种异α-酸(异合律草酮、异棒草酮和异加律草酮)、2种α-酸(合律草酮、律草酮+加律草酮)和2种β-酸(合蛇麻酮、蛇麻酮+加蛇麻酮),方法快速、简单,重复性好。为进一步控制和研究啤酒苦味提供了数据支持。
A HPLC method for determination of Iso-α-acid in wort and beer is established in this paper, which can separate and analysis three iso-α-acids( iso-humulone, iso-co-humulone and iso-ad- humu-lone) ,two α-acids(co-humulone and humulone + ad-humulone) and two β-acids(co-lupulone and lupulone + ad-lupulone ) Simultaneously in twenty-five minutes . The method is easy to be operated and can be applied to the bitterness study of wort and beer.
