摘要 目的了解无锡市农村居民的膳食结构和营养状况,为开展营养教育和营养改善工作提供依据。方法利用无锡市统计局2000—2007年农村居民各种食物的消费量和人口资料,分析食物消费状况、各种营养素的摄入及营养素的食物来源情况。结果无锡市农村居民谷类、动物性食物摄入较合理,蔬菜、水果、奶类、豆类食物摄入偏低,视黄醇、硫胺素、核黄素、抗坏血酸、钙摄入量占推荐摄入量(RNIs)或适宜摄入量(AIs)百分比偏低。结论无锡市农村居民膳食不均衡,部分微量元素摄入不足。应加强营养干预和膳食指南的健康教育,促进农村居民形成健康的饮食习惯,提高健康水平和生活质量。 [ Objective] To understand the dietary pattern and nutritional status among the rural residents in Wuxi City during 2000--2004 and provide evidence for the work of nutrition education and nutrition improvement. [ Methods] The food consumption data of the rural residents and the demographical data provided by Wuxi Statistical Bureau during 2000--2004 was used to analyze the food consumption status, nutrient intake and nutrient source. [ Results] The intake of grains and animal food was reasonable, but that of vegetables, fruits, milk and beans was relatively low ; the intake of retinol, thiamin, lactoflavin, ascorbic acid and calcium was relatively low compared with the RNIs or AIs. [ Conclusion] The diet of the rural residents in Wuxi is imbalanced; the intake of trace elements is insufficient; health education should be enhanced in the nutrition intervention and diet guidance; the diet habit should be improved in order to improve the health level and life quality of the rural residents.
