摘要 在食品流通贮藏过程中可以应用时间温度指示器实现对食品货架期进行实时监测和预报。对预测食品货架期的常用数学模型,如Arrhenius方程、Z值模型,Q10等的原理及应用进行了详述。 The real-time monitoring and prediction of the shelf life of foods could be realized by applying time-temperature indicator in the circulation and storage process of foods, The principle and application of common mathematical models for predicting the sheff life of foods such as Arrhenius eqantation, Z value model, Q10 were discussed in detail.
