核磁共振法跟踪胆碱合成温度的研究

由于胆碱的特殊性质造成合成后易分解的现象．使得用经典方法选择合成温度产生困难．本实验采用核磁共振的变温系统对胆碱合成过程中最佳温度的跟踪选择进行了较详细的研究．结果表明：此方法快速、准确、简单易行．

Something was abstracted from fried meat and tested with Ames test. The result shows that many things in fried meat are positive to TA97 and TA100. The activity of the mutagenicity is relevent to the amount, which means there exit other things causing mutagenicity besides Bap.
