色差仪光源参数对猪肉肉色测定结果的影响 被引量:22

摘要 猪肉肉色是直接反映猪肉品质的一项重要感官指标。在肉色测定中,使用色差仪可测得连续的不受外界光线影响的色差值。然而在肉色测定中使用不同的设定参数如光源、镜面反射等,对测量结果有很大的影响,且在不同实验室间的肉色测定结果也没有可比性。为此,统计分析了浙江大学动物遗传育种实验室近年来测定的猪肉肉色数据,研究和探讨了表色空间、镜面反射、光源和视场角等参数对测定结果的影响。结果显示,光源和镜面反射对颜色测定值的影响很大,进而确定测定猪肉肉色的最佳参数设定应为CIEL*a*b*系统、光源A和10°视场角。
