摘要
结构脂质是基于油脂代谢、营养学研究基础上设计的一类新型油脂,极具开发潜力。论述了不同脂肪酸在人体内代谢特点,不同人群的油脂需求以及结构脂质在食品、医药与营养领域的研究、应用现状。
The structured lipids are a new type of lipids based on the research results of oil and fat metabolism and nutrition and they have much potential to be developed. The character of different fatty acids metabolism, the requirement of lipids for different people and the application of structured lipids in the fields of food, medication and nutrition were summarized in this paper.
