摘要
测定荸荠皮提取物对亚硝胺合成的阻断作用和对亚硝酸钠清除作用的效果。采用微波辅助提取及L9(34)正交试验法提取荸荠皮中的活性成分,选择最佳提取条件,并测定荸荠皮提取物对亚硝胺合成的阻断率和对亚硝酸钠的清除率。微波辅助提取荸荠皮中的活性成分的最佳条件为:液固比(V∶W)为10(50%乙醇水溶液)∶1(荸荠皮粉),pH值为1,微波功率450W下提取20min,此活性提取物对亚硝胺合成最大阻断率为47.9%,对亚硝酸钠最大清除率为59.1%。
The inhibition effects of nitrosamine and scavenging effect to sodium nitrite by extracts of water chestnut ( Eleocharis turerosa) peel were investigated. Active components in water chestnut were extracted using microwave-assisted extraction and the optimum extraction conditions were determined by L9 (3^4) orthogonal test. The study showed that the optimum extraction conditions were: the ratio of liquid (50% alcohol) to solids ( 10 : 1 ) ; pH 1 ; microwave strength 450 W; extraction time 20 min. The maximum capabilities to inhibit the production of nitrosamine and scavenging effect to sodium nitrite were 47.9% and 59. 1% respectively.
