苦瓜多糖的制备及其抗氧化性质研究 被引量:8

摘要 对苦瓜多糖的提取pH、NaCl浓度、温度、料液比、时间、浸提次数进行了研究。结果表明最佳提取工艺为pH7、50℃、0.8%NaCl、料液比1:5、60min,在最佳工艺条件下苦瓜多糖浸提两次后的提取率达到11.2%。对苦瓜多糖的生物学活性研究表明其具有抗氧化活性,在浓度为15.0g/L时清除H2O2的能力达到100%,其还原能力也显著高于抗坏血酸。 The extraction technology of polysaccharide from Momordica charantia and the biological Activity of Anti-oxidation on polysaccharide which extraction from that were studied in this paper. The experiments show tha the optimum parameters were as following: pH7. NaCl: 0.8%. temperature: 50℃. the optimum ratio of extracting solvent(mL) and Momordica charantia(g) was 5:1 ; duration of extracting was 60minutes,the rate of polysaccharide was 11.2% after the second withdrawing. The study for activity of Anti-oxidation also show that polysaccharide of Momordica charantia could eliminate H2O2 entirety with content 15.0g/L, the deoxidization capacity of polysaccharide more stronger that Vc.
